Ingredients
1kg Chicken legs (4 to 5 pieces)
1thumb-sized fresh Ginger (minced)
6clove Garlic (minced)
2stalk Lemon grass (chopped)
1cup Vinegar (coconut, cane or cider)
1/2cup Lemon or calamansi juice
1 1/2tbsp Salt
1/4cup brown Sugar
1/2tbsp ground Black pepper
1/2cup Coke soft drink
Basting Sauce:
4tbsp Margarine or butter (melted)
3tbsp Annatto oil (atsuete oil)
1/4tsp Salt
1tsp Lemon or calamansi juice
4tbsp Banana ketchup
2tbsp Hot sauce (optional)
Instructions
Preparation:

Clean the chicken legs, pat them dry, and put them in a freezer bag. Set aside.

Peel, mince, and chop the spices like garlic, ginger, and lemon grass.

In a mixing bowl, combine ginger, garlic, lemon grass, salt, pepper, vinegar, lemon juice, and Coke soda drinks. Then mix well until well combined.

Pour in the marinade mixture into the freezer bag with the chicken legs and seal. Gently shake to cover the marinade on the chicken.

Marinate in the refrigerator for at least one hour, but overnight is better.

Prepare the basting sauce. Combine all the basting ingredients in a bowl. Stir and set aside.
Note: Hot sauce is optional (just add if desired).

When you're ready to cook, take it out of the fridge.
Grilling:

Grill the marinated chicken legs, occasionally brushing both sides with the prepared basting mixture, until cooked through.
