Ingredients
1kg Pork belly (cut into 1 to 2 inch cubes)
4clove Garlic (crushed)
1red Onion (chopped)
1/4cup Soy sauce
1/2cup Vinegar (cane or coconut)
1 1/2cup Coke drinks (soda drinks)
2tsp Peppercorn (crack or whole)
3dried Bay leaves (laurel)
Salt to taste
Water as needed
Instructions
Preparation:
Cut the pork meat into cubes 1 to 2 inches in size.
Peel and crush the garlic and chop the onion.
Cooking:
Heat the pan over a medium flame. Add the pork and sear until it turns a light brown and its fat starts rendering.
Push the pork into the pan on one side. Then add the garlic and sauté until light brown and aromatic then add the onion and sauté for 30 seconds.
Combine the pork and spices, then add the soy sauce and stir.
Add dried bay leaves and whole peppercorns. Stir.
Add the vinegar, let it come to a boil, and cook for 3 minutes without stirring.
Add the Coke drinks and bring to a boil. Adjust the heat to medium-low and simmer until the meat is tender.
Note: Add water if necessary.
Adjust the taste if necessary. If the taste is too sweet, add salt to balance it out.
Simmer again until the sauce reaches the desired consistency.
Turn off the heat, and then transfer to a serving plate.
