Crispy Pork Belly Recipe - Air Fryer. This is one of the best pork belly recipes I’ve made. The prep work is super easy; just make tiny holes in the skin and score the meat. And add the seasoning mixture to taste. The dish is cooked in an air fryer, the result is perfectly golden and incredibly crispy. It looks so appealing and inviting that everyone can’t resist. This is a must-try recipe at home.
Ingredients
1/2kg pork belly (slab)
2-4tbsp extra salt use to cover the pork skin
Marinate mixture:
1 1/2tsp salt
1/2tsp black pepper powder
1/2tsp hot paprika powder
1/2tsp sweet paprika powder
1tsp brown sugar
Baste:
1tsp white vinegar
2tsp vegetable oil
Instructions
Preparation:
Wash and clean the pork belly, then pat it dry.
Make tiny holes in the pork belly skin. Using a meat tenderizer, a metal skewer, or an ice pick, poke as many holes as you can in the pork skin, being careful not to go too deep and puncture the meat. Set aside.
Score the meat part ½ inches parallel with a depth of half an inch. Pat dry and set aside.
Tips: Scoring the meat increases the absorption of flavor.
In a small mixing bowl, combine salt, ground black pepper, hot paprika powder, sweet paprika powder, and brown sugar.
Place the pork belly on a flat surface with the skin facing down, then cover the meat with the seasoning mixture. A hand rub is required to evenly distribute the mixtures into the meat. Also, cover the edges of the meat with the seasoning mixture.
Flip the pork belly, then pat dry the skin and baste with white vinegar on top.
Note: The vinegar helps dry out the fat.
Wrap it in tin foil like a gift, place the meat facing down, and leave the skin uncovered.
Allow it to marinate overnight in the fridge, uncovered.
On the next day, remove from fridge and fat dry again the skin.
Cover the fat with salt, about 2 to 4 tablespoons and then you're ready to cook.
Cooking:
Set the air fryer to 125 °C and allow it to cook for 1 hour.
Take out the pork belly from the air fryer and remove the salt cover on top of the pork skin.
After the salt is totally removed, baste vegetable oil on the pork skin.
Put it back into the air fryer for the second time and apply high heat. Set the heat to 200°C and allow cooking for 20 to 30 minutes. At this time, you will notice that the pork skin is super crispy.
Take the meat out of the air fryer and transfer it to a chopping board. Slice them into serving pieces.
Serve with a dipping sauce of your choice.
