Ingredients
  • 1 kg beef shank (cut into serving pieces)
  • 8 cup water (add more as needed)
  • 2 onions (quartered)
  • 1 bch pechay (roughly cut)
  • 5 string beans (cut into 3 inches long)
  • 1 medium cabbage (roughly cut or quartered)
  • 4 ripe saba bananas (cut into 4 pieces)
  • 2 medium potatoes (cubes or quartered)
  • 6 fresh oregano leaves
  • 2 corn on the cob (cut into 4 pieces)
  • 2 stalk spring onions (cut into 2 inches long pieces)
  • 1 tbsp fish sauce (optional)
  • salt (as needed)
  • pepper to taste
Instructions
  1. Gather all the ingredients needed for the recipe. Peel and cut the vegetables and spices into preferred sizes.

  2. In a large cooking pot, place the beef shank, add water, turn on the heat, and bring the liquid to a boil over high heat.

  3. Add the onion, peppercorns, and oregano leaves, then cover the pot with a lid and reduce the heat to medium-low. Cook or simmer for an hour until the meat gets tender but is not falling apart on the bones.

    Note: You can add more water if necessary. To get the meat tender faster, it's better to use a pressure cooker if available.
  4. Add the potatoes, saba slices, and corn. Add salt and ground black pepper to taste, stir, and cook for 5 minutes.

  5. Add the cabbage, pechay, string beans, and spring onion; add fish sauce to taste if desired.

  6. Cover again and cook for 3 to 5 minutes, or until the vegetable is tender but not overcooked.

  7. Check it, taste it, and adjust as necessary. Turn off the heat and transfer it to a serving bowl.
