This recipe for kalderetang baka is so delicious and mouth-watering. This Filipino dish is often served by many households on regular days or on special occasions. This dish is cooked with ingredients of tender beef, potatoes, and carrots stewed in tomato sauce. It’s so meaty, satisfying, and very enjoyable to eat with a lot of warm rice.
Ingredients
1kg beef (cubed)
2cup potatoes (sliced)
2cup carrots (sliced)
1 red bell pepper (sliced)
1 green bell pepper (sliced)
1 onion (finely chopped)
5clove garlic (minced)
1/2cup liver spread or liver paste
1cup tomato sauce
3cup beef broth or water as needed
5 dried bay leaves
1/4cup cooking oil
1/2cup green olives
1tsp crushed chili
salt and pepper to taste
Instructions
In a pan, heat cooking oil on low-medium heat. Pan fry the sliced carrots and potatoes until they turn light brown. Remove from the pan the fried sliced potatoes and carrots, and set them aside.
In the same pan, sauté the minced garlic and finely chopped onion.
Add the cubed beef. Cook for 5 minutes, or until the color turns light brown.
Add the dried bay leaves. Stir it well, then add the liver spread or liver paste and stir again.
Pour in the tomato sauce and beef broth or water.
Cover and cook the beef until tender, about 2 hours.
For a shorter time in cooking, use a pressure cooker to soften the beef; it only takes 30 minutes.
Add the pan-fried sliced potatoes and carrots, previously set aside. Simmer for 10 minutes.
Add the green olives and sliced red and green bell peppers. Stir and continue to cook for 5 minutes more.
Season it with salt and pepper to taste. Adjust the taste according to your preference.
Remove it from the heat and place it in a serving bowl. Serve, share, and enjoy!
