Adobong pusit with sprite is a hearty and really delicious Filipino dish. This version of adobo squid is similar to the usual way of cooking adobo dishes, with a slight difference in how the sauce is cooked for maximum flavor. In this recipe, the sauce is cooked longer until the liquid evaporates and reduces a little more, to make a thicker sauce. With this method of cooking, the dish looks more delicious and appetizing.

Ingredients
  • 1 kg Baby Squid (small pusit) (deboned, mouth removed, cleaned inside out, and kept the ink intact.)
  • 1 cup Sprite (lemon soda)
  • 1/4 cup Vinegar
  • 2 tbsp Soy sauce
  • 6 clove Garlic (chopped)
  • 1 medium Onion (chopped)
  • 1 Tomato (sliced)
  • 2 dried Bay leaves
  • 3 Long green chili
  • 3 tbsp Cooking oil
  • Salt and ground black pepper (to taste)
Instructions
    Preparation:
  1. Clean the squid (pusit), debone them, remove teeth, then set aside.

    Note: Keep the ink sack intact.
  2. Peel, chop, and slice the spices for the recipe.

  3. Cooking:
  4. In a pan, heat cooking oil over a medium-low flame. Saute the onion and garlic until aromatic, then add the tomato slices, saute, and mash slightly.

  5. Add the baby squid (small pusit) and saute with the onion, garlic, and tomato. Allow them to cook for 3 minutes.

  6. Add the vinegar, soy sauce, salt, and pepper to taste. Then pour in the lemon soda (Sprite) and add the dried bay leaves.

  7. Cook for another 3 minutes with the lid on. After 3 minutes, remove the squid (pusit) from the cooking pan, put them in a bowl, and set aside for a while.

  8. Place the long green chilies in the pan. Boil the sauce until it thickens.

  9. When the sauce thickens, add the squid back into the pan.

  10. Taste the sauce and adjust it if necessary. Keep cooking for a minute.

  11. Turn off the heat and transfer them to a serving bowl. Serve hot with a plate of steaming rice.
