Ingredients
Marinating
1kg beef chunks (2 lbs)
2tbsp calamansi or lemon juice
1/3cup soy sauce or 12 tbsp.
2tbsp oyster sauce
freshly ground black pepper
Other ingredients
2potatoes, quartered
1large carrot, sliced diagonally
3bay leaves
1medium onion, diced
6cloves garlic, minced
2tomatoes, seeded & diced (optional)
1tbsp fish sauce (for umami)
1cup tomato sauce
3tbsp tomato paste (for richness)
3 to 4cup water or beef broth
1beef broth cubes
2red bell pepper, sliced or cubed
salt & pepper to taste
1tbsp sugar or to taste

Instructions
Marinate the Beef

In a bowl, combine beef chunks, calamansi juice or lemon, soy sauce, oyster sauce and ground black pepper.

Mix well and marinate for at least 1 hour or up to overnight for deeper flavor.ย
Sautรฉ Aromatics

In the pot or wok heat cooking oil, pan-fry the vegetables. Then set aside

In the same pot or wok, just leave 3 tbsp. of oil to sautรฉ the garlic, onion, and tomatoes until softened.

Add the marinated beef, (reserve marinade), sautรฉ with the aromatic for 5 minutes or until light brown
Slow-Cook the Beef

Pour in the reserve marinade then add fish sauce (if using), and cook for 1 minute.

Stir in tomato paste and tomato sauce, for 1 minute.

Pour in water or broth, add bay leaves, beef broth cubes and bring to a boil.

Lower heat, cover, and simmer for 1.5 to 2 hours until beef is tender (add water if needed).
Add Vegetables

Once beef is tender, add potatoes and carrots. Simmer for 5 minutes until soft.

Toss in bell peppers and cook for 2โ3 minutes (keep them crisp).
Season & Serve

Adjust taste with salt & pepper if needed.
