Yummy Eggplant Stir Fry

This eggplant stir fry with egg (ginisang talong) is a quick and savory dish. This is a great choice for a side dish or a vegetable main dish. I regularly eat at Chinese restaurant, and saw this recipe eggplant stir fry dish.  I decided to order and eat it and it was so delightful to eat with steamed rice.

Since then I decided to cook it at home. It's a simple vegetarian recipe that only requires a few widely available ingredients. The ideal cooking method is just too easy. The eggplant was simply sliced into pieces, fried, and then seasoned with spices. Simply add long green chili, chili flakes or chili powder to your ingredients list if you want a savory flavor. I easily cooked this recipe at home and share to eat together my family and they too love the taste. It's preferable to eat it while it's still hot, with a bowl of hot rice and a cold beverage. I easily cooked this recipe at home and share to eat together my family and they too love the taste.

Ingredients
  • 2 eggplant, about 300g (cut and sliced)
  • 3 tbsp cooking oil (to saute)
  • 3 clove garlic (diced)
  • 1 onion (diced)
  • 2 long green chili (chopped)
  • 1 tomato (diced)
  • 2 eggs
  • 1/2 tsp salt to taste (add more as necessary)
  • 1/4 tsp ground black pepper
  • pinch seasoning granules (optional)
  • coriander leaves or green onion leaves (finely chopped)
  • extra cooking oil (for frying the eggplant)
Instructions
  1. Cut and slice the eggplant lengthwise into bite-sized pieces.

  2. Heat cooking oil in a pan over low to medium heat. Fry the sliced eggplant until it turns light brown.

    Note: Pan-fry immediately the sliced eggplant to avoid darkening.
  3. Flip over to fry the other side. Repeat the process until all are finished.

  4. Turn off the heat, take it out of the pan, and set it aside.

  5. Peel, dice, and chop the spices needed for the recipe.

  6. In the same pan, saute the garlic until light brown and aromatic.

  7. Add the onion and saute until soft. Then add the long green chili and saute.

  8. Add the tomato and keep sauteing for a minute over low heat.

  9. Meanwhile, crack two eggs into a bowl and beat them. Then pour it into the pan with the spices.

  10. Season with salt and ground black pepper to taste. Allow it to cook a bit, then scramble the mixture.

  11. Add the fried eggplant and mix to combine. Then add seasoning granules to taste if desired; this is optional.

  12. Mix and keep cooking for a minute. Taste it and adjust as necessary.

  13. Turn off the heat and transfer to a serving plate.

  14. Serve warm; it goes well with a bowl of warm rice.
