Ingredients
2 eggplant, about 300g (cut and sliced)
3tbsp cooking oil (to saute)
3clove garlic (diced)
1 onion (diced)
2 long green chili (chopped)
1 tomato (diced)
2 eggs
1/2tsp salt to taste (add more as necessary)
1/4tsp ground black pepper
pinch seasoning granules (optional)
coriander leaves or green onion leaves (finely chopped)
extra cooking oil (for frying the eggplant)
Instructions
Cut and slice the eggplant lengthwise into bite-sized pieces.
Heat cooking oil in a pan over low to medium heat. Fry the sliced eggplant until it turns light brown.
Note: Pan-fry immediately the sliced eggplant to avoid darkening.
Flip over to fry the other side. Repeat the process until all are finished.
Turn off the heat, take it out of the pan, and set it aside.
Peel, dice, and chop the spices needed for the recipe.
In the same pan, saute the garlic until light brown and aromatic.
Add the onion and saute until soft. Then add the long green chili and saute.
Add the tomato and keep sauteing for a minute over low heat.
Meanwhile, crack two eggs into a bowl and beat them. Then pour it into the pan with the spices.
Season with salt and ground black pepper to taste. Allow it to cook a bit, then scramble the mixture.
Add the fried eggplant and mix to combine. Then add seasoning granules to taste if desired; this is optional.
Mix and keep cooking for a minute. Taste it and adjust as necessary.
Turn off the heat and transfer to a serving plate.
Serve warm; it goes well with a bowl of warm rice. Share and enjoy the food!
