Ingredients
  • 1/2 kg pork chop
  • 2-3 tbsp cooking oil (to fry)
  • Brine Solution
  • 3 cup water
  • 2 tbsp salt
  • 3 clove garlic (crushed)
  • 3 dried bay leaves
  • ground black pepper
  • Marinade Sauce
  • 1 1/2 tbsp soy sauce
  • 1/2 tbsp brown sugar
  • 1/4 tsp salt (to taste)
  • 1/4 tsp ground black pepper
  • 1 tbsp vegetable oil
  • 2 tbsp ketchup
  • 1 tbsp lemon or calamansi juice
  • 1/4 tsp turmeric powder
Instructions
  1. Make the brine solution. In a large bowl, combine water, salt, crushed garlic, ground black pepper, and dried bay leaves. Stir.
  2. Prepare the pork chop, wash the meat, and make a few cuts or slits through the fat parts.

  3. Add the pork chops to the brine solution, submerge them, cover with a lid or plastic cling wrap, and let it set for at least 3 hours.

  4. In another bowl, prepare the marinade mixture. Combine soy sauce, vegetable oil, lemon or calamansi juice, salt, sugar, ground black pepper, turmeric powder, and ketchup. Stir until well combined.

  5. After brining, discard the liquid and pat the meat dry with a paper towel.

  6. Brush the meat with the prepared marinade mixture. Brush it on both sides of all the meat.

  7. Let the marinade sauce sit on the meat for at least an hour. Overnight is better; don’t forget to put it in the fridge.

  8. To consume, heat 2 to 3 tablespoons of cooking oil in a pan. Fry the pork chop for 3 to 5 minutes over medium heat.

Note: Adjust the cooking time depending on the thickness of the meat.
  9. Flip it over to cook the other side.

Note: Don’t over fry the meat to keep it juicy inside and yummy.
  10. Once cooked, remove from the heat, cut, and serve with your favorite dipping sauce.

The dish goes well with warm rice. Share and Enjoy!
