Ingredients
Marinating:
1kg pork pigue (cleaned)
1/4cup soy sauce
2tbsp oyster sauce
4tbsp lemon juice or calamansi juice
1tsp ground black pepper
For cooking:
5tbsp vegetable oil (divided)
1tbsp garlic (chopped)
2tbsp tomato paste
1tbsp brown sugar
1 medium onion (chopped)
2 dried bay leaves
2cup water + 1 cup
1can small liver spread
1/2cup cheese (grated)
Instructions
Preparation:
Wash and pat dry pork meat, usually the pigue part.
In a large mixing bowl, put the pork meat, then add lemon or calamansi juice, soy sauce, oyster sauce, and ground black pepper. Mix until well combined. Marinate for 1 to 2 hours at least.
While marinating the meat, prepare all the ingredients, like garlic and onion, for sauteing.
Cooking:
In a wok over medium heat, add vegetable oil, saute the garlic until aromatic, add onion saute until soft and translucent. Then add the pork with the marinade sauce. Cover the lid and cook for 10 minutes.
Open the lid and add tomato paste and bay leaves. Stir.
Add 2 cups of water, cover the lid and simmer for 20 minutes or until the meat is tender.
When the pork is tender, turn off the heat and remove the meat from the pan, putting it on the chopping board. While the sauce is still in the pan, transfer it to the container and set it aside.
Note: Let the pork cool down before slicing it into chunky pieces.
In the same pan, add 3 tbsp. of oil and heat it, then put in the pork slices. Pan-fried it, one side at a time, until it turned light brown.
Add the sauce previously set aside. Add liver spread, sugar, and 1 cup of water. Stir fry over low to medium heat.
When the sauce becomes slightly thick, add the shredded cheese and stir. Adjust the taste as necessary.
Transfer to a serving plate. Serve immediately with warm rice. Happy cooking. Share and enjoy eating.
