Ingredients
2 1/2cup Desiccated coconut
3fresh Eggs
3 Egg yolk
1can Condensed milk (390 grams)
1/2cup Butter (melted)
1/2cup Coconut cream
1/4cup Sugar
2tsp Vanilla extract or essence
1/2tsp Salt
1/2cup All-purpose flour (sifted)
2tsp Baking powder
60-70 Mini cupcake liners
Instructions
Preheat the oven to 350 degrees Fahrenheit and line mini muffin pans with mini cupcake liners.
Beat the eggs until they are light and fluffy. Add the sugar and melted butter, then whisk well until the sugar is completely dissolved.
Add the sweetened condensed milk and vanilla extract, then whisk until well blended.
Add the sifted all-purpose flour and baking powder and mix well.
Fold in desiccated coconut and let it soak for 5 minutes to soften the coconut.
Scoop mixture into cupcake liners about 2/3 full.
Bake macaroons for at least 15 minutes or until they turn light brown on top.
Transfer to a rack to cool down. Serve and enjoy eating!
