Ingredients
  • 250 g ground pork or giniling
  • 5 small size eggplant, approx. 500g (sliced)
  • 1 medium onion (chopped)
  • 5 clove garlic (chopped)
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp cooking wine
  • salt and pepper powder (to taste)
  • 3 tbsp vegetable oil (to fry the eggplant)
  • 2 tbsp vegetable oil (for sauteing)
  • 1 stalk green onion (chopped)
  • 3 red chili (chopped)
  • water
Instructions
    Preparation:
  1. Wash the eggplant and slice them into pieces, then soak them in a bowl of water to prevent them from darkening.

  2. Peel off the skin of the onion and garlic, and then chop them into pieces.

  3. Cooking:
  4. Heat up vegetable oil in a pan. Add the eggplant and cook until lightly browned. Take it out of the pan and set it aside.

  5. In the same pan, add 2 tbsp of vegetable oil, then saute the garlic and onion.

  6. Add the ground pork. Stir fry until the pork color changes to light brown. Let it cook for 5 minutes, or until the fat renders.

  7. Add soy sauce and oyster sauce. Then stir and cook for another 10 minutes, or until the pork is tender.

    Note: Add a small amount of water as necessary during the tenderizing process.
  8. When the meat is tender enough, add back the fried eggplant to the pan. Add the chopped red chili.

  9. Season with salt and pepper to taste. Add the cooking wine. Mix it and give it a taste. Adjust it as necessary.

  10. Add chopped green onions or scallions. Toss it and serve it warm.
