Adobong Baboy na Tuyo Recipe

Ingredients
  • 1 kg (Baboy) Pork belly (cubed)
  • 1 head Garlic (minced)
  • 1 medium Onion (sliced)
  • 4 dried Bay leaves
  • 1/2 cup Vinegar
  • 1/2 cup Soy sauce
  • 1 1/2 cup Water (add more if necessary)
  • 2 tsp Peppercorn
  • 1 tbsp brown Sugar
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 tbsp Cooking oil
  • chopped Red chili or chili flakes (optional)
Instructions
    Preparation:
  1. Cut the pork meat into serving parts, preferably 2-inch cubes.

  2. Peel the garlic and mince it, then peel and slice the onion.

  3. Cooking:
  4. Heat the cooking oil in a large pan over medium heat.

  5. Add the garlic and saute until fragrant. Then add the onion slices and saute until softened.

  6. Add the pork and cook for about 5 minutes, or until it is lightly browned.

  7. Add the soy sauce and stir to distribute it into the meat, then add the vinegar and allow to cook for 2 minutes without stirring.

  8. Add sugar and stir. Then pour in the water and add the peppercorns and bay leaves.

  9. Cover the pan and simmer for about an hour or until the pork gets tender. Occasionally mix.

    Note: Add water as necessary until the meat gets tender.
  10. Taste it and adjust as necessary; add salt and ground black pepper to balance the taste.

    Tips: If you want to make the dish spicy, just add some chopped red chilies or chili flakes to the recipe.
  11. Keep cooking until the liquid is about to totally evaporate and the meat turns dry but oily.

  12. Transfer to a serving dish. Serve with a pair of steaming rice.
