Ingredients
260g corned beef
2 eggplant or talong (diced)
5clove garlic (peeled and sliced)
1 onion (peeled and sliced)
1stalk spring onion (chopped)
1tbsp cooking wine
1/4cup vegetable oil
paprika powder to taste
salt and black pepper to taste
Instructions
Preparation:
Prepare the canned corned beef, vegetable and spices.
Slice the garlic and onion, then dice the eggplant. Chop the onion leaves.
Cooking:
Heat vegetable oil in a pan or wok. Set the flame on high. Then pan fry the diced eggplant, then remove it from the heat and set it aside.
Take out some of the vegetable oil, just leave 2 tablespoons for sauteing. Saute the sliced garlic until aromatic. Add the sliced onion and saute until translucent and soft.
Add the canned corned beef and saute with the garlic and onion.
Season with paprika powder, salt, and pepper. Mix.
Add the pan-fried eggplant previously set aside, then mix.
Add cooking wine to taste. Stir and cook for a minute.
Add the chopped onion leaves. Mix.
Transfer to a serving plate. It’s best to serve it hot with a side of warm rice.
