This pork caldereta-kalderetang baboy dish is a Filipino tomato-based stew cooked with tomato sauce, tomato paste, or fresh tomatoes. Cooking this involves sauteing the meat with onions, garlic, and tomatoes until the meat is brown. The Caldereta recipe should have a liver spread. It wouldn't be a caldereta dish without the liver spread. If you can't get liver spread, I think broiling a piece of pork liver and finely slicing it is a better option.
Ingredients
1kg Pork (sliced into cubes)
2tbsp Cooking oil
4clove Garlic (minced)
1 Onion (sliced)
1 Red bell pepper (sliced)
1 Green bell pepper (sliced)
2 Potatoes (cubes)
2 Carrot (sliced)
250g Tomato sauce
4cup Water
1/2cup Liver spread
1tsp Spanish paprika powder
1tbsp Sugar (to taste)
1/2cup Cheddar cheese (optional)
Salt (to taste)
Ground black pepper (to taste)
Instructions
In a pan or a pot, heat the cooking oil. Cook the carrots in a pan for about 3 minutes. Remove it from the pot and drain out any extra oil in a colander. Potatoes can be used in the same way. Fry them in a pan.
Sauté the minced garlic for 10 seconds in the same pan or pot, then add the onions and cook for another 20 seconds. To keep it from burning, stir it every now and then.
Add the pork. Pan-fry this for 20-25 minutes or until it turns brown.
When the pork is brown, add the tomato sauce and stir until everything is completely combined. After that, pour in 4 glasses of water. Bring to a low simmer for 20-25 minutes, or until the meat is cooked through. Then stir in the liver spread for a minute.
To make the pork more tender and flavorful, add the bell peppers and continue to cook for another 10 minutes.
To add flavor and make the dish more tasty, season with 1 tbsp. sugar and 1 tsp Spanish paprika.
Season with a pinch of salt and ground pepper. Balance the taste accordingly. Taste it and adjust according to your desired taste.
Add the pan-fried carrots and potatoes. Stir it for 3 minutes. And then add shredded cheese to give it a creamy flavor. Stir for another minute.
We’re done! A very easy dish! This pork caldereta is best served with warm rice.
