Ingredients
Main Proteins:
750g pork kasim, menudo cut (shoulder)
250g pork liver, menudo cut (menudo cut)
Vegetables & Fruits:
1large potato, cubed
1medium carrot, cubed
2bell peppers, diced (red/green)
200g cooked green peas
Sauce & Seasonings:
7tbsp soy sauce (for marinade)
3tbsp calamansi juice (for marinade)
8cloves garlic, minced
1medium onion, sliced
200g tomato sauce
3tbsp tomato paste
2tbsp raisins
1 ½cups water
salt, sugar, and black pepper to taste
cooking oil for sautéing
Instructions
Marinate the Meat

In separate bowls, marinate pork and liver with soy sauce, calamansi juice, garlic, onion, and pepper.

Refrigerate for at least 30 minutes (1 hour for deeper flavor).
Cook the Liver

Heat 1 tbsp oil in a pan. (Reserved marinade liquid) Sear liver for 2 minutes per side. Set aside.
Brown the Pork

In the same pan, sauté garlic and onion until fragrant.

Add marinated pork (reserve marinade). Brown for 5–7 minutes.
Simmer the Stew

Pour in reserved marinade liquid. Add tomato sauce, tomato paste, water, and bay leaf.

Cover and simmer for 30 minutes on low heat.
Add Vegetables

Stir in potatoes and carrots. Simmer for 5 minutes.
