Ingredients
  • 1/2 kg eggplant (talong) (cut into byte pieces)
  • 3 clove garlic (minced)
  • 1 medium onion (sliced)
  • 1 tuna flakes in oil in can (any brand)
  • 1 ripe tomato (seeded and sliced)
  • 2 green long chili (sliced)
  • 2 tbsp cooking wine (optional)
  • 1/4 tsp salt (add more as necessary)
  • 2 tbsp oyster sauce
  • 1/4 cup water
  • 1/2 cup cooked green peas (optional)
  • ground black pepper to taste
  • sugar to taste
  • 1 stalk spring onion (finely chopped)
  • 5 tbsp vegetable oil (divided)
Instructions
  1. Cut the eggplant (talong) into bite-sized pieces. Then peel, mince, and slice the spices.

  2. In a pan, heat 3 tablespoons of cooking oil and fry the eggplant until light brown. Flip them to cook the other side; once cooked, remove them from the pan and set them aside.

  3. Heat 2 tablespoons of cooking oil for sauteing. Add the garlic and saute until fragrant. Add the onion and saute until soft. Add the tomato and saute for a few seconds, then add the long green chili and keep sauteing for a minute.

  4. Add the canned tuna flakes and oil (any prepared brand). Stir and bring to a soft boil, then add 2 tablespoons of cooking wine, if desired.

  5. Add salt to taste, and add 2 tablespoons of oyster sauce. Stir and keep cooking for a few minutes over medium heat, then add ¼ cup of water and reboil the liquid. Add the cooked green peas and stir.

  6. Add the pan-fried eggplant (talong) and stir. Add ground black pepper and sugar to taste.

  7. Add the chopped spring onion and stir. Taste it and adjust as necessary.

  8. Turn off the heat and transfer to a serving dish. Serve warm, and enjoy!
