Ingredients
1/2kg Pork (adobo cut)
1medium Onion (sliced)
4clove Garlic (minced)
1/2cup Soy Sauce
1tbsp Oyster Sauce
2pc dried Bay Leaves
3tbsp Vinegar
1tbsp Peppercorns
Salt to taste
Sugar to taste
Pepper Powder to taste
1-2cup Water (add more if needed)
2tbsp Cooking Oil

In a pan, heat cooking oil over medium heat, saute the onion until soft, add the garlic and saute until aromatic.

Add the pork adobo cut and season with salt and ground black pepper to taste.

Stir and cook over medium heat until the fat comes out of the meat and turns a light brown color.

Add soy sauce, peppercorns, and oyster sauce. Stir.

Add water and bay leaves, then cover and cook for 30 minutes, or until the pork meat gets tender.
Note: Add water as needed until the meat gets tender enough.

Add vinegar, cook for a few minutes without stirring, then add sugar to taste. Stir and keep cooking over medium-low heat for a few minutes.

Taste it and adjust as necessary. Simmer until the sauce becomes slightly thick or until the desired sauce consistency is reached.
