Description

This pork and cabbage recipe is simple to prepare and uses only a few ingredients. The pork is being fried, rendering the fats and simmering until tender. To make the dish more flavorful and delicious, I added cabbage, carrots and green peas, as well as spices and condiments. It’s an awesome comfort food. Serve it with a bowl of warm white rice.

Ingredients
  • 1/2 kg pork liempo / pork belly (sliced into strips)
  • 450 g cabbage (chopped)
  • 1 carrot (sliced into strips)
  • 1 red onion (sliced)
  • 5 clove garlic (minced)
  • 100 g green peas (cooked)
  • 2 tbsp oyster sauce
  • 1 stalk onion leaves (chopped)
  • 2-3 tbsp cooking oil
  • salt & sugar to taste
  • black pepper powder to taste
  • water as needed to tenderize the meat
Instructions
  1. Prepare the pork belly (liempo), cut into stripes.

  2. Prepare the vegetables, such as peeling and slicing.

  3. In a pan, heat 2 tablespoons of oil and pan fry the sliced carrot for 2 minutes, then set aside.

  4. In the same pan, add the sliced meat and season with a pinch of salt and pepper to taste. Then continue cooking over medium heat until the meat has toasted marks. Then take it out of the pan and set it aside.

  5. Remove the oil from the pan with the oil rendered by the meat. Just leave 2 tablespoons for sauteing. Add the sliced garlic and minced onion. Saute until soft and fragrant.

  6. Add the sautéed meat we set aside earlier, then add oyster sauce. Stir and continue cooking over medium heat. Pour water cover lid and simmer for 25 minutes, or until the water has reduced to 1/3 and the meat is tender. To balance the flavor, season with salt and sugar. Adjust the taste accordingly.

  7. Add the cooked green peas, carrot, and cabbage and season with a pinch of pepper powder to taste. Stir and continue cooking until the cabbage gets soft and fully cooked, then add the sliced onion leaves or scallions, 2 inches in size, tossing to mix. Adjust the taste before serving according to your preferences.
