Prep work

  1. Gather all the ingredients needed, peel and chop the spices. Cut the pork belly into pieces.

Cooking

  1. Heat cooking oil in pan then add the cut pork belly. Cook it over medium heat until fat is released and color turns golden brown. Once cook, remove from pan and set aside.

  2. In the same pan, saute the garlic until fragrant then add the onion and saute a few seconds.

  3. Add the tomato and saute until soft.

  4. Put the pork back in the pan and stir.

  5. Add 3 tablespoons of fish sauce. Stir.

  6. Add 1 1/2 cup of monggo beans (mung beans) and stir.

    Note: Wash and clean the monggo beans.
  7. Pour in 4 cups of water, then cover. Simmer it for 30 minutes, or until the liquid has reduced to 1/4, over medium-low heat.

  8. Open and stir, add 2 cups of water, or more if necessary.

  9. Add 1 beef or pork broth cube. Stir.

  10. Cover again and simmer until the monggo is tender.

  11. Once the monggo beans reached the right softness, add 1/2 cup of malungay leaves, then stir.

  12. Add 2 long green chilies and cook for a few minutes, covered.

  13. Season with salt and ground black pepper, to taste. Taste and adjust as needed.

  14. Add chicharon if desired, and continue cooking for a minute.

    Note: If you want more soup in the dish, add more water, then adjust the taste accordingly.
  15. Turn the heat off and transfer the dish. Serve and enjoy!
