Making the batter:

  1. In a mixing bowl, combine all the dry ingredients, like all purpose flour, baking powder, sugar, and salt. Set aside.

  2. In a separate bowl, combine the wet ingredients such as evaporated milk, eggs, melted margarine, and a few drops of yellow food color.

  3. Pour the wet ingredients into the dry ingredients. Gently whisk until all is combined and blended.

    Note: Don’t over mix the batter to keep your hotcake spongy and to avoid becoming hard and robbery result.

Cooking:

  1. Heat a pan, then lightly spray it with cooking oil or grease it with some margarine. Adjust the heat to medium to low.

  2. When the pan is hot, scoop 1/4 cup of the batter and pour it into the pan. Cook for 1 to 2 minutes on each side. When it’s cooked, remove it from the pan.

    Repeat the process until the batter is used up.
  3. Grease the hotcake with margarine on top, then sprinkle it with white sugar.

  4. It’s best to serve it while a bit hot.
