Chicken Caldereta Recipe- Kalderetang Manok
Description
Chicken Caldereta simmered to tenderness in a tomato sauce with potatoes, bell peppers, and green pepper chili. It's easy to make and inexpensive, yet it's filling and delicious. They're ideal for family dinners, gatherings, birthdays, fiestas, holidays, and other special occasions.

Cut chicken into serving pieces. Season with salt.
Pre-heat cooking oil in a pan. Pan fry sliced potatoes and carrots, then set aside.
Pan fry chicken meat. Cook on medium heat for at least 1 minute, then set aside.
In the same pan, saute the minced garlic, onion and tomato. Add the pan-fried chicken and pour in the tomato sauce and water. Cover and simmer until the chicken meat is tender.
Add chicken broth cubes. You may use any broth cube brand (I used Knorr cubes). Add liver spread (any brand) and the sliced potatoes and carrots, pan fried earlier. Add sliced red and green bell peppers and chopped red and green chili peppers.
Season with salt and ground black pepper. Add grated cheese, mix well and continue cooking for 2 minutes.
Remove from heat, then serve.
