Instructions

Preparing the soy milk

  1. In a large mixing bowl, place the soy beans, add hot water, and soak overnight.

  2. Drain the soaking water and wash the soy beans, and then transfer them into a grinder or blender.

  3. Add water and start grinding them until they turn into liquid milk. Strain the blended soy beans using a fine cloth or a desired strainer bag.

  4. Start squeezing out as much liquid or soy milk as possible. Set aside the pulp for later use or use it for another recipe.

  5. In a deep pot, transfer the soy milk and bring to a boil for 25 minutes over medium heat. Stir.

  6. Strain the bubbles that float on top. After boiling them, turn the heat off and allow them to cool for 5 minutes.

  7. Meanwhile, in a large mixing bowl, combine cornstarch, calcium sulfate, and water. Pour in the soy milk and remove the bubbles that float on top.

  8. Place paper towels on top of the bowl for condensation and cover them with a lid. Allow them to rest for 20 minutes or more until they sit.

Boiling the sago

  1. Pour in enough water in a deep pot to cover the sago pearls. Turn the heat on and set it to medium.

  2. Add the tapioca or sago pearls and stir. Cook them until soft, chewy, and translucent.

  3. Remove from heat, rinse well, and drain. Put the boiled sago in a container with a lid.

    Note: You can cook the tapioca pearls according to the package instructions.

Making the sugar syrup

  1. In a saucepan, combine the sugar, water, and vanilla. Turn the heat on to medium and bring them to a boil.

  2. Once it starts to boil, reduce the heat to medium-low  and start simmering them for 3 minutes, or until the sugar turns to syrup.

    Note: Stir the mixture as necessary to avoid burning at the bottom of the pan.
  3. Turn off the heat and transfer them into a prepared container.

Serving

  1. To serve, scoop a small cup full of heated silken tofu. Top with tapioca or sago pearls. Add brown sugar syrup on top and drizzle with condensed milk if desired. Serve warm and enjoy.
