Preparation:

  1. Prepare the alamang (baby shrimp), wash it thoroughly, and drain the water.

  2. Prepare the needed vegetables; peel them if needed, and dice, mince, and chop them into pieces. Set aside.

  3. In a mixing bowl, put the alamang, then add the onion, tomato, garlic, and onion leaves.

  4. Crack 2 to 3 fresh eggs over it and season with salt, ground black pepper to taste, and seasoning granules.

    Note: Substitute a pinch of sugar to taste if you don’t want to use seasoning granules.
  5. Mix them, and once they are combined, it is ready to fry.

Cooking:

  1. Heat a pan or wok over medium-low heat. Then add a small amount of cooking oil to fry.

  2. Once the oil is hot, add 1/4 cup of the alamang mixture to the pan and make a circle to form a torta, or omelet.

  3. Fry the alamang mixture for 2 minutes or more on each side, or until golden brown.

    Note: If the amount of oil to consume is not a major concern for you, then you can fry the tortang alamang with lots of oil to make it crisp.
  4. Remove the tortang alamang from the heat when both sides are golden brown and place it on a plate lined with a paper tower. Paper towels help absorb the oil from the torta.

  5. Serve it with sawsawan (dipping sauce). Share and enjoy the food.
