This recipe is for homemade skinless pork chorizo. Traditionally, it is made of pork, but nowadays, it may also be made of chicken, beef, or even tuna.   1. In a large mixing bowl, combine all of the ingredients, then add the ground pork. Mix until completely smooth.

  2. Cover the mixture with plastic cling wrap or transfer it into a container and place it in the refrigerator overnight or for a couple of days for curing.

  3. Prepare the wrapper; either wax paper or plastic wrapper should be used. Wrap the chorizo individually by scooping a tablespoon of the mixture and placing it on. Roll and fold the ends to form them. Repeat the process until it's all done.

  4. Place them in a plastic bag, preferably a re-sealable plastic bag, and freeze them.

  5. Before cooking the chorizo, remove the wrapper, pour half a cup of water into it and allow it to cook until the water has evaporated completely, then add a small amount of oil and continue cooking until it is fully cooked.

  6. Serve with your favorite dipping sauce. Share and enjoy, happy eating!
