Instructions
In a pot, pour enough water and add the bamboo shoots. Then boil bamboo shoots until tender. Transfer the bamboo shoots to a bowl and set aside.
In a pan, heat cooking oil over low to medium heat. Saute minced garlic until aromatic. Add the minced onion and saute until translucent.
Add sliced tomato and saute. Add the strips of chicken breast. Season it with salt and ground black pepper to taste. Saute it for 2 minutes.
Add water then cover and simmer for 8 minutes.
Add the boiled bamboo shoots, soy sauce, oyster sauce, paprika powder, and sugar to taste. Mix well.
Add the sliced bok choy and cook it for a few minutes.
Add slurry. Stir until the soup becomes slightly thick. Optionally, add sesame oil. Stir and it’s all done.
Transfer to a serving bowl. It is best to eat it with a cup of warm rice. Share and enjoy eating.
