  1. In the rice cooker, put the glutinous rice, then wash it a few times. Add enough water to cook the rice, then add 1 tablespoon of turmeric powder and stir. Cover, turn on the heat, and cook until the rice is well cooked through.

  2. Meanwhile, prepare the chicken, cut it into bite-size pieces, and set it aside. Next, prepare the spices and vegetables.

  3. Heat the oil in a large skillet over medium heat. Add the ginger and saute for a few seconds, then add the onion and saute until soft, then add the garlic and saute until aromatic.

  4. Add the chicken and cook, stirring occasionally, for about 4 to 5 minutes or until the color changes to lightly brown.

  5. Stir in 2 cups of coconut milk and bring the liquid to a boil. Then Add 1 cup of water, chicken broth cubes, fish sauce, and bay leaves. Cover and simmer for 5 minutes, or until the liquid reduces by half.

  6. Check it, and then add the hotdog slices, carrot, red and green bell pepper, raisins, and turmeric powder. Stir, cover, and simmer again for another 3 minutes.

    Note: Add chorizo de Bilbao if desired.
  7. Check, then add salt and ground black pepper to taste. Taste it and adjust accordingly. Reduce the heat to low, and then add the cooked glutinous rice to the skillet. Keep mixing until everything is well combined and the liquid is absorbed.

    Note: If you want a crusty or toasty bottom to the dish, transfer the rice mixture to a large pan lined with banana leaves, then cover with banana leaves. Cook them over medium heat until they form a crust at the bottom. Then flip over the rice so that the toasted bottom is on top, and continue to cook to develop a crust on the bottom.
  8. Serve it plain or garnish it with a sliced boiled egg and some vegetables before serving, if desired.
