Peel the skin of the cassava, wash it, and grate it.
In a large mixing bowl, combine the grated cassava, coconut and sugar. Mix until well combined.
Scope 2 tablespoons of the mixture, then put it on the prepared banana leaves. Form it cylindrical, like a sausage. Wrap them by rolling the banana leaf. Gently press at both ends and seal them, folding the banana leaf.
Arrange the suman on a steamer tray. Do the same to the rest of the cassava mixture until it is used up.
Pour in enough water into the steamer and bring the water to a boil. Steam the suman for 20 to 30 minutes or until cooked through.
Once cooked, take out the suman and let it slightly cool. Serve warm and enjoy.
