Cheese Filling
In a large nonstick pan, combine cheese powder, all-purpose flour, and sugar. Add water and whisk until well blended.
Turn on the heat and bring the mixture to a soft boil.
Reduce the heat to medium-low and keep stirring until all the liquid evaporates and the mixture turns to a soft batter consistency.
Note: The cheese powder can be substituted with real cheese; start with ½ cup and adjust the taste accordingly.
Assembly
Place a lumpia wapper on a clean flat surface.
Note: Square or round wrappers can be used; divide them if they are too large.Spread 1 teaspoon of the cheese mixture on top of the spring roll wrapper. Roll it as tightly as possible.
Keep the stick 4 inches long. Fold both ends of the wrapper and bring it to the middle. Continue rolling the wrapper until the end, and seal it. Repeat the process until the cheese mixture is used up.
Frying
Heat cooking oil in a pan about 2 inches deep over medium heat.
Fry the cheese stick rolls in batches until golden brown and crispy.
Once cooked, transfer them to a deep-frying basket or rack to drain the excess oil.
Serve warm and crispy alone or with a dip sauce of your choice. Enjoy!
