Cut the tomato in half, core it, and slice it lengthwise. Then slice the onion. Set it aside.
In a mixing bowl crack the eggs and add salt and pepper powder to taste. Beat it.
In a wok over medium heat, add 1 tbsp of vegetable oil, then add the beaten eggs and scramble it.
When cooked, remove it from the wok and set it aside.
In the same wok, add 2 tbsp. of vegetable oil, then saute the sliced onion.
Add the tomato slices, saute, then add a small amount of water and bring to a gentle boil.
Add the brown sugar and ketchup and stir until the tomatoes are soft.
Season with salt and pepper powder. Stir and taste it according to your liking.
Adjust the heat to low, then make a slurry and pour it in and stir until it becomes slightly thick.
Add the scrambled eggs and chopped parsley or spring onion, then mix it.
Remove it from the heat and place it on a serving plate. Share and enjoy eating.
