Preparation:

  1. Gather all the ingredients needed for the recipe.

  2. Skin and devein the shrimp; set aside.

  3. Peel and mince the onion and garlic, then slice the green onion leaves into thin rounds.

Cooking:

  1. In a large skillet or wok, heat 2 tablespoons of cooking oil over medium-high heat.

  2. Add the shrimp and cook, flipping halfway through, for 3 minutes. Remove the shrimp with a slotted spoon. Set aside.

  3. In the same skillet or wok with the remaining oil and juice of the shrimp, add garlic, onion, and ground ginger. Cook, stirring, for a minute.

    Note: Add turmeric powder if desired; it is optional. Turmeric enhances the appearance of the dish while also adding flavor.
  4. Add the frozen mix of vegetables: green peas, carrots, and corn. Cook, stirring, for several minutes or until vegetables begin to soften.

  5. Push the vegetable half side of the skillet or wok, add the slightly beaten egg in a free space, allow it to cook slightly, and scramble the egg.

  6. Add the rice and start mixing until combined. Then evenly drizzle with soy sauce and stir to mix it through.

  7. Add the pan-fried shrimp we set aside earlier. Evenly season with salt and pepper, and stir to combine.

  8. Add the round, thinly sliced green onion; keep stirring to combine until the shrimp is reheated through.

  9. Taste it and adjust as necessary. Turn off the heat and transfer to a serving dish.

  10. Serve warm and enjoy the food!
