Pork Pinakupsan Bites is a Visayan delicacy; it’s crispy and delicious. It's made of pork and cut into serving bites, seasoned with salt to taste, and fried with their own fats until crisp and golden. The dish is similar to the lechon kawali, but the lechon kawali needs an incredible amount of cooking oil for deep-frying the pork. The pork pinakupsan cooks only on its own rendered fat until crispy.

Clean and wash the pork belly, pat them dry, and then cut them into 2 inch cubes. Put in a bowl and season with salt; add ground black pepper to taste.
Pre-heat a large, thick-bottomed pan or wok over high heat. Put the pork pieces in the pan or wok and cook for about 10 minutes, or until the pork begins to render its own fat.
Note: Turning occasionally is required.Reduce the heat to medium-low once the pork has started to exude oil. Cook the pork covered, check, and turn them occasionally until they are golden brown.
Note: Add crushed unpeeled garlic halfway of the cooking process if desired. This method will give extra fragrant to the dish.Once cooked remove them from the heat with a slotted spoon and put them on a wire rack to drain the excess oil.
Serve it warm and crispy with spicy vinegar dip sauce, or store it in an airtight container for future use.
