Pork Pinakupsan Bites is a Visayan delicacy
This dish is a crispy, flavorful, and utterly delicious way to enjoy pork. Made with bite-sized pieces of pork, it’s seasoned simply with salt to enhance its natural flavors and then fried until golden and crispy. What makes this dish unique is that it’s cooked using only the pork’s own rendered fat, eliminating the need for additional cooking oil. This method not only makes the dish healthier but also allows the pork to develop a rich, savory flavor and an irresistible crunch.
The dish is often compared to lechon kawali, another beloved Filipino crispy pork recipe. However, while lechon kawali requires a significant amount of oil for deep-frying, this dish, known as pork pinakupsan, relies solely on the fat rendered from the pork itself. As the pork fries in its own fat, it becomes incredibly crispy on the outside while remaining tender and juicy on the inside. The result is a dish that’s both indulgent and satisfying, with a texture and flavor that’s hard to resist.
Preparing pork pinakupsan is straightforward and requires minimal ingredients. The pork is cut into serving-sized pieces, seasoned with salt, and then cooked over medium heat. As the pork fries, its fat slowly renders out, creating a natural frying medium that crisps up the meat to perfection. The process requires a bit of patience, but the result is well worth the wait—a dish that’s crispy, golden, and packed with flavor.
This dish is perfect as a main course, paired with steamed rice and a side of dipping sauce like vinegar with garlic and chili or a tangy sawsawan. It’s also a great addition to festive meals or family gatherings, where its crispy texture and rich flavor are sure to be a hit.
Try this pork pinakupsan recipe at home and enjoy a dish that’s simple to make yet incredibly satisfying. Its crispy exterior, juicy interior, and rich flavor make it a standout dish that’s perfect for any occasion!

Description
Pork Pinakupsan Bites is a Visayan delicacy; it’s crispy and delicious. It's made of pork and cut into serving bites, seasoned with salt to taste, and fried with their own fats until crisp and golden. The dish is similar to the lechon kawali, but the lechon kawali needs an incredible amount of cooking oil for deep-frying the pork. The pork pinakupsan cooks only on its own rendered fat until crispy.
Ingredients
Instructions
Clean and wash the pork belly, pat them dry, and then cut them into 2 inch cubes. Put in a bowl and season with salt; add ground black pepper to taste.
Pre-heat a large, thick-bottomed pan or wok over high heat. Put the pork pieces in the pan or wok and cook for about 10 minutes, or until the pork begins to render its own fat.
Note: Turning occasionally is required.Reduce the heat to medium-low once the pork has started to exude oil. Cook the pork covered, check, and turn them occasionally until they are golden brown.
Note: Add crushed unpeeled garlic halfway of the cooking process if desired. This method will give extra fragrant to the dish.Once cooked remove them from the heat with a slotted spoon and put them on a wire rack to drain the excess oil.
Serve it warm and crispy with spicy vinegar dip sauce, or store it in an airtight container for future use.
