Wash the kangkong (water spinach).
Separate the kangkong leaves from the stalk. Cut the stalk into 2 inch pieces. Set it aside.
In a pan, heat cooking oil over low to medium heat. Saute the garlic until aromatic, then add the sliced onion and saute until translucent.
Add the sliced tomato and saute for a few minutes, then add the kangkong stalk and soy sauce and mix. Cover and cook for 2 minutes.
Remove the cover and stir. Add the kangkong leaves, oyster sauce, vinegar and ground black pepper. Mix well.
Cover again and simmer for at least 1 minute or until the kangkong is fully cooked.
Stir, taste and adjust according to your preference.
Transfer to a serving plate. Serve it with a cup of rice. Share and enjoy eating.
