  1. Wash the kangkong (water spinach).

  2. Separate the kangkong leaves from the stalk. Cut the stalk into 2 inch pieces. Set it aside.

  3. In a pan, heat cooking oil over low to medium heat. Saute the garlic until aromatic, then add the sliced onion and saute until translucent.

  4. Add the sliced tomato and saute for a few minutes, then add the kangkong stalk and soy sauce and mix. Cover and cook for 2 minutes.

  5. Remove the cover and stir. Add the kangkong leaves, oyster sauce, vinegar and ground black pepper. Mix well.

  6. Cover again and simmer for at least 1 minute or until the kangkong is fully cooked.

  7. Stir, taste and adjust according to your preference.

  8. Transfer to a serving plate. Serve it with a cup of rice. Share and enjoy eating.
