Preparation:
Clean the fish galunggong, remove the innards, wash and drain water. Season them with a pinch of salt and rub them on the fish. Let them sit.
Prepare the spices needed, like garlic, onions, and tomatoes.
In a small bowl, combine soy sauce, lemon juice, oyster sauce, pepper, and sugar. Set aside.
Cooking:
Heat enough cooking oil in the frying pan. Fry the fish until golden brown.
Remove the fish from the frying pan and place it on a plate with paper towels. Set aside.
Using a clean pan, heat a small amount of oil. Then saute the garlic and onions until aromatic, and stir in the soy sauce mixture.
Add 1/4 cup of water or as needed and let it boil until it reduces a bit. Taste it and adjust it as needed.
Add the fried fish and add the ring onions, then simmer it for about 2 minutes, bathing the fish as needed. Then transfer to a serving plate.
Serve it while it is still hot. Share and enjoy the food.
