Biko with toppings is so yummy and deliciously sweet so creamy, chewy, and rich. It's made from sticky rice, coconut milk, and dark sugar. Top it with latik and crushed peanuts to make it even more delicious.

Instructions

  1. In a rice cooker, combine the sticky rice and water. Allow it to cook until all of the liquids have been absorbed. At this stage, the rice should only be almost done.

  2. Meanwhile, in a separate pot, add the coconut milk, brown sugar, and salt and cook over low heat. Stir constantly until the liquid has thickened into a camarel. Scoop and set aside 1/2 cup of the latik syrup for later use as a topping.

  3. Once the rice is cooked and the coconut milk-sugar mixture is thick enough, add the cooked rice to the coconut milk and sugar mixture and mix well. Cook until all of the liquid has evaporated but do not overcook.

  4. Once the biko has thickened and grown sticky, transfer it to the tray or receptacle and flatten the surface.

  5. Top with latik previously set aside and the crushed peanuts. Allow it to cool for at least 15 minutes before serving.

  6. Share and enjoy!
