Cleaning and boiling

  1. Clean up any excess fat. Rub pork intestines with vinegar and salt. Then rinse thoroughly with running water.

  2. In a cooking pot, combine the ruffled fat, whole peppercorns, 2 tablespoons salt, and lemongrass.

  3. Pour-in water. Let it boil. Simmer for 45 minutes, covered with a lid, until it is tender.

  4. When it is tender enough, turn the heat off. Remove it from the pot and then let the water drip off of the boiled ruffle fat. Set aside and let it dry to achieve better crispness.

Frying

  1. In a large deep fryer, pour in cooking oil and heat it up. While heating the cooking oil, dash salt all over the ruffled fat to taste.

  2. When the oil gets hot, slowly add the ruffled fat one by one to fry over low to medium heat. Deep fry them all until the texture becomes crispy or golden brown.

  3. When it is cooked, remove it immediately from frying. Place them on a platter with paper towels lined to absorb the oil.
