If you don’t want your chicken wings to be overly spicy, reduce the proportions of spicy ingredients or leave them out.

Chicken buffalo wings are fried chicken wings with a tangy sauce that has "strong flavor and taste." The preparation is almost like the traditional fried chicken wings. The difference is that after frying the chicken wings, they're tossed with a sauce or dressing. It enhances the flavor of the dish.

Marinating

  1. Cut the joint between the drumette and wingette. Remove the tip and pat dry.

  2. Put them in a mixing bowl. Add calamansi juice, salt, garlic powder, and ground black pepper, then mix well.

  3. Marinate the chicken wings for at least an hour.

Breading

  1. In a separate bowl, combine flour, cornstarch, paprika powder, salt, ground black pepper, and garlic powder. Mix it well.

  2. An hour later, get the chicken wings and dredge them in the flour-breading mixture. Then it's ready to fry.

Frying

  1. Heat enough cooking oil in a pan over medium heat. Once the oil is hot enough, gently put the chicken in.

  2. Fry them for about 10 to 12 minutes, or until light golden brown.

    Note: Don’t overcrowd the pan to maintain the temperature of the oil; fry them in batches until all are finished.
  3. Take the wings out of the pan and let them rest for at least 10 minutes.

  4. Set the heat to a high setting. Then double-fry it for well-cooked and crispy results.

  5. After cooking until golden brown and crisp, drain and set aside.

For the sauce

  1. Melt butter in a pan over low heat.

  2. Add tomato sauce, hot sauce, soy sauce, paprika powder, and brown sugar. Stir well.

  3. Add cornstarch and continuously mix until the sauce becomes thick.

  4. Add chili flakes. Stir well. Taste it and adjust as necessary.

  5. Add the fried chicken wings. Toss with the sauce until it is thoroughly mixed.

  6. Transfer it to a serving dish. Garnish with sesame seeds, if desired.

  7. Serve and enjoy eating. It goes well with warm rice.
