Preparation:

  1. Clean and wash the chicken then cut them into bite-sized pieces and set aside.

  2. Peel, mince and chop the spices needed for the recipe.

Cooking:

  1. Heat cooking oil in a pot or pan over medium heat, add the ginger and saute for a minute.

  2. Add the onion and saute until it softens. Add the garlic and saute until light brown and aromatic.

  3. Add the bell pepper and green chili, saute a minute.

    Note: Red chopped chili is optional, add it if desired to get an extra hot spicy taste.
  4. Add the chicken and saute together with the spices until it change color to light brown.

  5. Add soy sauce or fish sauce and ground black pepper, stir, and keep cooking for a couple of minutes.

  6. Add water and chicken broth cube, and allow the liquid to boil.

  7. Lower the heat and cover with lid, then simmer the chicken for 10 to 15 minutes.

    Note: Occasional stir in the middle of simmering to prevent sticking or burning.
  8. Season with salt and pepper to taste, stir and keep cooking until the desired sauce is reached.

  9. Taste it and adjust it as necessary then add uncut chili labuyo if desired for appealing looks.

  10. Turn the heat off and transfer them to a serving dish.

    Serve warm with a pair of hot steaming rice.
