  1. Cut the eggplant into desired sizes, and then slice it lengthwise.

  2. Season with salt and pepper to taste, garlic powder is optional.

  3. Heat vegetable oil in a pan. Once the oil gets hot, pan-fry the eggplant slices until one side turns dark brown. Flip it over to cook the other side until it’s cooked.
