Preparation:
Wash and clean the pork chops. Drain the water. Then cut it into halves.
In a large bowl, combine soy sauce, calamansi juice or lemon juice, ground black pepper, and stir. Then, place the pork chops in the sauce and mix them to soak. Cover it with a lid or use a resalable bag. Marinate it for at least 1 hour. For overnight marinating, I recommend putting it in the fridge.
Cooking:
In a pan, heat cooking oil. Over medium heat, pan-fry the marinated pork chops for 3 minutes, one side at a time or until the meat turns golden brown in color and fats renders. Then remove it from the pan and set it aside.
In the same pan, add a tablespoon of cooking oil to saute if necessary. Saute the chop garlic and onion until aromatic.
Put the fried pork chops back into the pan and pour in the marinade sauce. Bring it to a gentle boil over medium heat, then add water.
Cover the pan with the lid and simmer for 45 minutes, or until the meat is tender.
Tenderizing the meat depends on the quality of it. Add water as necessary.When the meat is tender, season with sugar, pepper powder, and salt (optional). Stir it and give it a taste. Adjust the taste as necessary according to the amount of the sauce you want in your dish.
Remove from heat and place on a serving plate.
