  1. Cut the ampalaya into rings. Set aside the cut edge of the ampalaya.

  2. Remove the core of the ampalaya to make it a ring.

  3. In a bowl with water and a tablespoon of salt, soak the ampalaya rings to remove the bitterness. Let it sit for at least 5 minutes, then drain the water.

  4. Cut and clean the remaining ampalaya. Slice it lengthwise and finely chop it. Soak it with water and salt, then drain.

  5. In another bowl, pour the canned corn beef. Add cornstarch, chopped garlic, chopped onion, salt, ground black pepper, paprika powder, brown sugar, and 1 fresh egg yolk. Mix it well.

  6. Put the corn-beef mixture into each ampalaya ring.

  7. Add the finely chopped ampalaya to the remaining corn beef mixture. Mix it well, then add 1 fresh egg and continue mixing. This is for the torta mixture. Set aside.

  8. In a pan, heat cooking oil on low to medium heat. Fry the ampalaya rings with the corn beef mixture fillings first.Fry it for 2 to 3 minutes, one side at a time. Remove it from the pan when it's cooked.

  9. Lastly, fry the torta mixture. Scoop the torta mixture and form a torta or omelette according to your desired size. Fry it for 2 minutes, one side at a time. Remove it from the pan when it’s cooked and serve.

  10. Serving it alongside a cup of heated rice is ideal with a pair of refreshing drinks of your choice. Share and enjoy eating.
