Preparation:
Gut the galunggong, remove the innards then wash and dry.
Season them with salt and rub them on the fish. Let them sit.
Prepare the spices needed, like garlic, onions, and tomatoes.
Cooking:
Heat enough cooking oil in the frying pan. Fry the fish until golden brown.
Remove the fish from the frying pan and place it on a plate with paper towels. Set aside.
Using a clean pan, heat a small amount of oil, then saute the garlic and onions until aromatic. Saute and press the tomatoes until they are crushed.
Add water and let it boil. Then add salt and ground black pepper, and stir. Add sugar to taste, (optional).
While boiling, crack the eggs in a bowl and beat them.
Pour the beaten eggs into the sauce. Add the chopped green onions.
Let it cook a bit and start stirring it until the egg curdles or coagulates. Taste it, and adjust it as necessary.
Add the fried fish, scoop the sauce, bath it over fried the fish. Then simmer it for about a minute. Then transfer to a serving plate.
Serve it while it is still hot. Share and enjoy the food.
