Preparation:

  1. Gut the galunggong, remove the innards then wash and dry.

  2. Season them with salt and rub them on the fish. Let them sit.

  3. Prepare the spices needed, like garlic, onions, and tomatoes.

Cooking:

  1. Heat enough cooking oil in the frying pan. Fry the fish until golden brown.

  2. Remove the fish from the frying pan and place it on a plate with paper towels. Set aside.

  3. Using a clean pan, heat a small amount of oil, then saute the garlic and onions until aromatic. Saute and press the tomatoes until they are crushed.

  4. Add water and let it boil. Then add salt and ground black pepper, and stir. Add sugar to taste, (optional).
