This Tortang Talong is very easy to make. Everyone can cook this delicious recipe. Eggplants are rich in vitamins and minerals. For this recipe, instead of grilling the eggplant, we used to boil it. Peel off the skin and dip it in a mixture of beaten eggs loaded with seasonings and spices. Fried it and you will have a very delicious torta talong (eggplant omelet).

  1. Bring a large pot of water to a boil and submerge the eggplants in it. Cover lid to cook.

  2. Flip them over once the skin has become discolored.

  3. When the skin is charred or wrinkly, remove the eggplant from the heat. Drain them and let them cool down before peeling off the skin.

  4. Crack 3 eggs into a mixing bowl. Then sprinkle salt and seasoning granules to taste, and beat.

  5. Thinly slice the onion leaves or scallions, then add them to the beaten eggs. Beat everything together to combine it.

  6. Dip the eggplants into the beaten egg mixture and flatten them with a fork.

  7. In a pan, heat 2 to 3 tablespoons of cooking oil. Place the eggplant then pour a few spoonfuls of beaten eggs over the top of each eggplant.

  8. Fry for about 3 minutes over low to medium heat.

  9. Turn over if the bottom is already brown. Repeat with the rest of the eggplants.

  10. When it's cooked, remove it from the fryer and use a paper towel to remove any excess oil.
