Made with pure ube (purple yam), creamy milk, and sweeteners, this frozen delight is packed into ice candy wrappers and frozen until perfectly firm. Preparation:

  1. Combine cornstarch and 1 1/2 cups fresh milk in a large pan and stir well until dissolved.

  2. Turn on the heat on medium flame. Bring the mixture to a boil, then reduce to a low heat and continue to cook until it thickens slightly and has a smooth, soft texture.

  3. Turn off the heat and transfer the mixture into a large mixing bowl.  Then whisk in the sugar until it is completely dissolved.

  4. Allow to cool down a bit, then add the remaining fresh milk. Stir.

  5. Add condensed milk, all-purpose cream, vanilla extract, and ube food color (if using). Stir thoroughly until well blended.

  6. Add the ube halaya and mix again until well distributed into the mixture.

  7. Adjust the mixture's sweetness level. Increase the amount of sugar or condensed milk if desired.

  8. Allow the mixture to cool down before packing.

Packaging:

  1. You will need a ladle, funnel, or pitcher to transfer the mixture into the ice candy bag.

  2. Pour the mixture into the ice candy bag to your desired size. A 3 x 16 inch ice candy plastic bag can be used.

  3. Tie the top tightly of each ice candy. Repeat the process until all of the mixture is used up.

  4. Arrange the ice candy in the freezer and freeze until frozen.

  5. Serve and enjoy at any time! It is best to consume it during the hot season.
