There are numerous Ukoy dishes that contain shrimp, fish, and even veggies like squash and many more. In this recipe, I used potatoes and carrots shredded together and seasoned with certain seasonings before frying to have a crispy, crunchy vegetable ukoy dish. Filipinos love this dish to be eaten with a dipping sauce of spiced vinegar and a plate of rice.

  1. Wash and peel the carrot and potato. Grate it using a mandoline slicer or grater. Cut it into around 2 inch lengths.

  2.  In a mixing bowl, put the grated carrot and potato. Add salt, ground black pepper, paprika powder, granulated garlic, eggs, cornstarch, and all-purpose flour. Mix well.

  3. Chop green onions and add them to the potato-carrot mixture. Mix it once more.

  4. In a pan, heat cooking oil over low to medium heat. Scoop a tablespoon of the mixture. Fry for 5 minutes or until crisp.

    Don’t overcrowd the pan to maintain the oil’s temperature. Fry it in batches.
  5. When the potato carrot ukoy floats, flip it to fry the other side.

  6. Once it’s cooked and crisp, remove it from the frying pan. Use a strainer or a table towel to absorb the excess oil.

  7. Serve it with your favorite dipping sauce. Share and enjoy eating.
