Heat the frying oil in a large skillet or wok.
Once the oil is hot, add the garlic and cook until it changes color to a medium brown and becomes crisp.
Remove the garlic from the heat and set it aside.
Reduce the heat to low and fry the peanuts; stirring occasionally is required. Fry the peanuts for 10 minutes or until light brown and crisp.
Remove the peanuts from the cooking pan and drain any excess oil with a sieve.
Place the peanuts in a mixing bowl with the fried garlic and salt, then toss and serve.
