  1. Peel the skin from a semi-ripe or ripe Saba or plantain banana.

  2. Pour vegetable oil into a large wok and heat to the desired temperature.

  3. When the oil becomes hot, gently drop the bananas into the pan and fry for about 2 minutes, or until they start to slightly brown.

  4. Gradually add the brown sugar and stir.
