Marinate the Beef

  1. In a bowl, combine beef chunks, calamansi juice or lemon, soy sauce, oyster sauce and ground black pepper.

  1. Mix well and marinate for at least 1 hour or up to overnight for deeper flavor. 

Sauté Aromatics

  1. In the pot or wok heat cooking oil, pan-fry the vegetables. Then set aside
  2. In the same pot or wok, just leave 3 tbsp. of oil to sauté the garlic, onion, and tomatoes until softened.
  3. Add the marinated beef, (reserve marinade), sauté with the aromatic for 5 minutes or until light brown

Slow-Cook the Beef

  1. Pour in the reserve marinade then add fish sauce (if using), and cook for 1 minute.
  2. Stir in tomato paste and tomato sauce, for 1 minute.
  3. Pour in water or broth, add bay leaves, beef broth cubes and bring to a boil.
  4. Lower heat, cover, and simmer for 1.5 to 2 hours until beef is tender (add water if needed).

Add Vegetables

  1. Once beef is tender, add potatoes and carrots. Simmer for 5 minutes until soft.
  2. Toss in bell peppers and cook for 2–3 minutes (keep them crisp).

Season & Serve

  1. Adjust taste with salt & pepper if needed.
  2. Serve and Enjoy. Best enjoyed with steamed rice!
